Changing oil based on gut feeling is a thing of the past. Anyone who regularly serves fried food knows that frying oil is expensive – and crucial for quality and taste. However, even after just a few uses, the oil can change its properties. The result? Dark, burnt-tasting fat and unnecessarily high costs due to premature oil changes. With professional oil measurement, you can easily check the TPM value (Total Polar Materials) of your frying oil – i.e. the proportion of age-related polar compounds in the oil. If this value exceeds the permissible limit (recommendation 24% TPM), it is time for a change. This way, you know exactly when your oil is really used up – and ensure consistently high quality with optimum cost-effectiveness.

Preparation: Heat up the deep fryer and do not add any food for at least 20 minutes
Switch on the measuring device
Immerse the sensor in the hot oil

1. What does the TPM value mean?
The TPM value (Total Polar Materials) indicates how much your frying oil has already aged. The higher the value, the more degradation products – so-called "polar compounds" – the oil contains. From a value of 24% TPM, the oil is no longer usable according to the recommendation of the DGFett e.V.. This means: From this point on, the taste can suffer and health-concerning substances can develop. With the ebro® FOM 330, you can measure this value in seconds and objectively – without chemicals or test strips.
2. How often should I check my frying oil?
This depends on the usage – the rule of thumb is: In system and large-scale catering, daily measurement is recommended, with high usage even multiple times daily. Regular checks extend the lifespan of the oil and ensure consistent quality.

3. Can I measure different oil types?
Yes, the FOM 330 is suitable for all common frying oils and fats – whether sunflower oil, rapeseed oil, palm oil or special blends. The device automatically recognizes the oil temperature and adapts the calculation of the TPM value accordingly. It's only important that the oil is hot enough when measuring (min. 50°C – better 150°C) so that the result is correct.
4. What is the difference to test strips?
Test strips only provide approximate estimated values and are highly dependent on the color and temperature of the oil. Digital measuring devices like the ebro® FOM 330, on the other hand, measure precisely, reproducibly and independently of external influences. They display the exact TPM value on a display and can save or transfer the results – so you receive an objective basis for your oil change and save real money.
5. How do I clean and maintain my measuring device correctly?
After each measurement, the sensor should be briefly wiped with a soft cloth or kitchen paper to prevent grease residues from sticking. If needed, the sensor can be cleaned with warm water or cleaning alcohol – but please do not put it in the dishwasher or immerse it completely! Regular cleaning not only ensures hygienic conditions, but also permanently precise measurement results.
6. How does digital documentation help me with HACCP verification?
With the model FOM 330 BT, you can save all measured values with timestamp, location and user. The data can be transferred via Bluetooth – ideal for businesses that need seamless quality and HACCP documentation. This saves you time in tracking and fulfills all legal requirements at the touch of a button.
